Is creamy and mild but has a full flavor. Tangy citrus notes balance the rich creaminess of the cheese and a hint of mushrooms.

Reading Raclette
Cow, Vermont
Creamy, semi-soft, this cheese is distinctly nutty in flavor which can be attributed to cows grazing in Vermont pastures. A Swiss Alps style cheese with a mild and easily meltable texture.

Cow, CA
Creamy, sweet, raw milk cheese with a medium punch of blue flavor. Goes well with sweeter white wines and full bodied reds such as Syrah and Cabernet.
